If you like baked goods with aromatic filling of potatoes and liver, then you should definitely like these dumplings, and besides, this traditional Ukrainian dish is very easy to prepare.

INGREDIENTS

  • Flour 1 Kilogram
  • Water 300 Milliliters
  • Egg 1 piece
  • Potatoes 500 grams
  • Chicken liver 300 grams
  • Onions 3-4 pieces
  • Vegetable oil To taste
  • Spices To taste
  • Salt To taste

To begin, we sift the flour into a bowl, mix it with salt and add the egg and water to the bowl.

Knead these ingredients into a soft, elastic dough, cover it with a towel or napkin, and leave to rest for 20-30 minutes.

In the meantime, let's start filling, first we need to boil the potatoes in salted water, and to make them cook faster, cut them into small pieces. Drain the water from the finished potatoes and mash them until pureed.

Heat vegetable oil in a frying pan and fry the chicken liver on all sides.

When the liver has cooled a little, it should be passed through a meat grinder.

After the liver, fry finely chopped onions in a frying pan.

Place the twisted liver and fried onions in a saucepan with the mashed potatoes. Mix everything, add spices and salt to the filling if necessary.

Divide the rested dough into several parts, alternately roll each into a thin layer and cut out circles with a cup of dough.

Place a little prepared filling in the middle of each circle, seal the edges of the dough and form dumplings.

You can steam the dumplings or boil them in lightly salted water for 5 minutes after floating. Serve the finished dish with sour cream or fried onions. Bon appetit everyone!

  • sour milk (or kefir) – 1 glass,
  • soda – 1 tsp,
  • flour - how much will it take,
  • salt - to taste,
  • butter – 2 tbsp.

Cooking process:

To prepare the dough for dumplings, you need to mix eggs and sour milk. Beat a little with a fork.

Then add vinegar and melted butter.

Pour flour onto a kitchen board and pour liquid kefir base into the recess on top.

Now you need to knead the base for dumplings using kefir. Add flour little by little and knead until the dough stops sticking to your hands, but remains soft and elastic. It is important not to knead the dough too tightly, otherwise the dumplings will not be fluffy.

To prepare the filling, you need to boil the chicken liver. You need to cook it literally 5-7 minutes after boiling, otherwise it will be too hard. Then grind the liver through a blender or meat grinder.

Peel the potatoes and boil in pieces until tender. Be sure to add salt during cooking. Then make mashed potatoes.

Mix mashed potatoes with liver, add salt to taste and stir until smooth.

Divide the dough into 2 parts, and then in half again. And roll each quarter into a sausage and divide it into 8 parts.

Roll out each flatbread with a rolling pin, giving it a round shape.

Place the filling in the middle of the rolled out flatbread and pinch the edges to form a dumpling.

Now the products need to be welded. Boil water by adding 1 tbsp salt. After the water boils, carefully throw the dumplings into it, stir so as not to stick to the bottom, and after the water boils again with the dumplings, cook for another 10 minutes.

The finished dish can be greased with butter or fried onions. Peel the onion, finely chop and fry in sunflower oil until golden brown.

Using a slotted spoon, remove the dumplings from the pan and transfer to a bowl. Sprinkle fried onions on top and stir.

Best served with sour cream.

Soak the liver in cold water with the addition of soda. For 1 liter of water you need to take a tablespoon of soda. Then rinse thoroughly, cut into pieces and fry in vegetable oil until golden brown. Peel, wash and finely chop the onion. Transfer to the liver and fry a little more. Grind the liver and onion through a meat grinder. Add to mashed potatoes and stir.

Form the dough into a rope and cut it into pieces. Roll each piece into a circle, put the prepared filling on them and form dumplings.
