Set aside five of the most beautiful mushrooms; if you have them large, cut them and set aside the halves (quarters). Wash the remaining mushrooms and chop finely. Remove the peel and husk of the onion and carrot and chop into short strips.

Chop the garlic and herbs separately, sauté the carrots and onions in oil, and temporarily transfer to a plate. Add and heat a little more oil, add the mushrooms and fry until fragrant and noticeably darkened. Return the first part of the sauté to the pan, add the herbs and garlic. Heat for a minute and remove from heat.

Place potatoes, peeled and cut into beautiful half-slices, into boiling broth and set aside for a quarter of an hour. Then add the mushrooms intended for decoration, boil them for up to five minutes and remove. Add the roast to the soup, stir, then add the cooled chopped meat. Let it simmer for about eight minutes, add salt and pepper to your liking.

While stirring, add the cheese, grated with a coarse grater. It is necessary to achieve almost complete dissolution of the cheese shavings, after which we turn off the heat.

Serve the soup, beautifully decorated with sprigs of large herbs, with a spoonful of thick sour cream. Add boiled large mushrooms to each serving. Do as you please with boiled lard; small slices can be placed in very hot soup or offered separately, sprinkled with grated horseradish.

Option 4: Unusual mushroom soup in meat broth with barley
