Although it may seem that the recipe is very simple, but watch this video to make sure you understand everything correctly. It is short, so viewing will not take much of your time.

How to choose the right ingredients

  • The skin of squid should shimmer in different colors and cannot be monophonic.
  • Good frozen peeled meat must be white or cream in color without blemishes and damage.
  • It is better to choose unpeeled squids: after all, in addition to being cheaper, they are often of better quality.
  • Take spaghetti and pasta to your liking, but it's better when it's made with whole grain flour.
  • Cream for the sauce is better to take fat, then you can do without sour cream.

What to serve with

An already prepared portion of the dish can be sprinkled with grated parmesan, and in its absence, with another hard type of cheese. Spaghetti or pasta can only be supplemented with wine, and nothing else is needed for them. For pasta with tomato sauce red dry or semi-dry wine is more suitable Which one to take depends on your taste. For a dish with a creamy sauce, take white wines, dry or semi-dry. You can take semi-sweet if you don’t drink anything else, but it’s better to refuse dessert.

  • Clean the squid well and don't forget that even frozen seafood may not have the transparent film removed.
  • You need to fry squids for a short time and in a very hot pan so that they do not become tough.
  • Tomatoes or tomatoes can be rubbed through a sieve if you want the perfect sauce.
  • To remove the skin from tomatoes, make cuts on both sides, scald them with boiling water, and it will peel off easily.

Other options

If you liked this recipe and you are a supporter of fast food, then you will like the following options. For example, which can be cooked in just 10 minutes if you buy already peeled ones in the store. Or, with which practically nothing needs to be done at all to get a delicious dish.

Of course, it is best to cook fish, since it is much larger than the same shrimp, and the price is more profitable. For example, you can make a light side dish for it to get a healthy tasty dinner. Or cook, which is even easier than in a pan. And if you want to have delicious sandwiches for breakfast, then cook and enjoy the salty taste with tea.

What do you think about this type of pasta? What spices did you add? What were they served with? Tell about everything in the comments.

If you have ever been to Italy, you have probably brought home recipes for the most delicious pasta with seafood. This appetizing dish will not leave your household indifferent. Today we will talk about how to choose the right ingredients and give the most popular pasta recipes.

Peculiarities

Usually, when talking about Italian cuisine, the first associations are with carbonara pasta, as well as the well-known spaghetti bolognese. These are very appetizing, however, pretty gourmet dishes. If you intend to cook something more original, then you should dilute the traditional pasta with various seafood. Shrimps and mussels go well with spaghetti, and squids give it a particularly delicate and at the same time spicy flavor.

Squids are rather delicate seafood, they make the Italian dish not only quite spicy, but also low-calorie, and also useful due to the presence of a large amount of protein, vitamins and minerals necessary for the body. However, keep in mind - if you have a too weak gastrointestinal tract, then you should not eat pasta with squid in a creamy sauce, as this will create an excessive load and may cause pain in the stomach.

You should not cook a dish for people prone to asthma, dermatitis and edema, since squid, like all other marine reptiles, are allergenic foods.

How to choose the right ingredients?

The main products that I will need in the preparation of Italian pasta with squid are directly seafood and various types of pasta. The purchase of these ingredients should be approached as thoroughly as possible. It is better to buy unpeeled squids, of course, in this case you will have to tinker a little, removing the skin, but in general the quality of such products is much higher than that of factory-cleaned ones.

Keep in mind that the skin cannot be uniform, it usually shimmers in several shades, but the flesh, on the contrary, is only white or cream. Otherwise, it is likely that you have a stale product in front of you. Squid can be purchased both fresh and frozen. They are bought both as a separate product and as part of a cocktail. Squid can be combined with other marine reptiles - mussels, shrimps, as well as cuttlefish and octopuses.

As for pasta, you can take any spaghetti, but always from durum wheat. Most often they use pipe regatta (better known as a snail), penne rigate (we call this type of pasta feathers) or spaghetti. It is important that the pasta is not too large, and you do not need to buy ribbed products. Preference should be given to premium products, which are often labeled as group A products.

One of the main ingredients is cheese, preferably Parmesan, although cheddar will also go well with squid and spaghetti. If neither one nor the other cheese is available, then you can use any other, but certainly a hard variety.

As for cream, it is better to use a product with a fat content of 10% or 20%, however, sour cream is also suitable.

If desired, a little paprika is added to the sauce - it adds a little extra spiciness and gives the dish a pinkish tint. In addition, you will need special seasonings, as a rule, they choose a mixture of Provence herbs, which includes basil, rosemary, thyme, oregano and some others. A little black ground pepper, garlic powder and a little bit of nutmeg must be added to the paste.

Some recipes involve the addition of olives or olives - in this case, it is better to take pitted products. In addition, tomatoes and sweet peppers are often added to pasta - they must be ripe, but firm and without any visible defects. Don't forget the oil. The classic recipe involves the use of olive oil, but in case of its absence, sunflower or corn will do just fine.

Let's say a few words about the instrument. To prepare the sauce for spaghetti, you need a frying pan with thick walls and for boiling pasta - a saucepan with a lid. Do not be alarmed if at the beginning of cooking the spaghetti sticks out a little from the container - after a few minutes the product will soften and the pasta will be completely immersed in the liquid. Of course, you will also need a wide variety of kitchen utensils - knives and boards for cutting food, a colander to quickly drain the hot water from pasta, and a wooden spatula that is used to stir seafood.

Recipes

Cooking pasta with squid in a creamy or tomato sauce takes quite a bit of time and essentially boils down to simply boiling pasta and a short heat treatment of seafood and vegetables. There are several nuances:

  • pasta for cooking an Italian dish with marine reptiles should be boiled 1.5-2 minutes less than indicated in the cooking instructions;
  • spaghetti should be laid strictly in salted and necessarily boiled water;
  • vegetables must be fried in vegetable oil, stewed in a special saucepan or grilled;
  • any recipe can always be supplemented with meat, mushrooms and other seafood;
  • grated hard cheese is considered to be an obligatory accompaniment of pasta;
  • the dish will turn out more appetizing if you serve it to the table with freshly chopped greens.

And now let's dwell on the most popular recipes for this spicy dish.

Easy option

Even a dish that is simple to prepare needs attention from the cook who prepares it. For 0.5 kg of pasta, 2-4 cloves of garlic, 600 g of pre-peeled squid, half a can of ready-made Paolo sauce, as well as salt to taste, ground black pepper, olive oil and a set of dry spices are needed.

In a thick-walled pan, chopped garlic is fried in oil, the dried leftovers can then be thrown away. Squids should be cut and cut into rings, and then fried for 3-4 minutes in the same garlic oil and then put on a large dish, covered with a lid on top, otherwise the moisture will quickly evaporate and the dish will be less juicy.

At the same time, it is necessary to boil water in the cooking container and bring the spaghetti to half-cooked, drain, then rinse with running water and add to the sauce along with squid and selected seasonings. Mix all the ingredients thoroughly and then fry for about 1 minute. The dish is served hot at the dinner table, sprinkled with grated cheese and fresh juicy herbs.

Quick Recipe

This paste is very common among zealous housewives from Italy. To prepare it, you need a rather original set of ingredients: 300 g of sea reptiles, cut into rings, a jar of cherry tomatoes in their own juice, a small onion, a couple of cloves of garlic, one bell pepper, a teaspoon of basil and sage, salt, crushed black pepper and suitable pasta products.

You have to prepare very quickly. Finely chopped onions and garlic should be fried in sunflower or olive oil, and shortly before the end of frying, dry or fresh sage should be added. Immediately after that, tomatoes should be placed in the pan, carefully knead them with a fork and simmer everything together for another 3-4 minutes.

The pepper is cut into small pieces and sent to the rest of the products. The contents of the pan must be brought to a full boil and allowed to boil for a couple more minutes, then add the squid. In parallel, boil spaghetti, rinse and mix with the resulting sauce.

Such a dish should be classified as instant, which can be prepared "quickly".

With creamy sauce

In traditional Italian cuisine, the greatest importance is given to the preparation of sauces that complement the dish. This is what distinguishes the main cooking traditions of Italian culinary specialists from the cuisine of other countries. A classic example is pasta with cream cheese sauce. For this dish you need to prepare:

  • 0.5 kg of squid (you can combine them with other seafood);
  • 250 g fresh cream 20%;
  • 250 g of hard cheese;
  • 1 spoon of butter;
  • 10-15 olives or olives;
  • salt;
  • spices to taste (most often use thyme, oregano, as well as basil and rosemary).

First, boil the pasta, drain and rinse under running water. While the spaghetti is cooking, you can start preparing the sauce. To do this, sea reptiles are boiled for a couple of minutes in slightly salted water, laid out in a hot pan and fried in boiled oil for another couple of minutes. The entire contents of the pan must be poured with cream, mixed with herbs and simmered for about 6-7 minutes.

After this time, add grated cheese and heat a little more until it is completely melted. At the final stage, the sauce is combined with pasta and left for 2-3 minutes so that the pasta is saturated with sauce. Before serving, the dish is decorated with olives in the national Italian style.

In sour cream sauce

In the absence of cream, you can cook pasta with sour cream sauce. To do this, you will need a simple set of products:

  • 300 g pasta;
  • 100 g mussels;
  • 200 g shrimp;
  • 250 g squid;
  • 1 head of leek;
  • 4 tbsp. natural sour cream;
  • 3-4 cloves of garlic;
  • 40 g of vegetable oil;
  • 1 spoon of butter;
  • pepper, salt, spices - to taste.

Melt the butter, mix with vegetable oil, heat up and add the chopped onion and chopped garlic, after which they should be fried until dry (the rest can then be thrown away). In parallel, dip the squid cut into rings in boiling salted water and boil for 5 minutes over medium heat. Mussels with peeled shrimp should be laid out for squids and stewed together for a couple more minutes. At the final stage, add sour cream to the mixture, as well as salt and pepper with spices, cover with a lid and heat for another quarter of an hour.

In parallel, you should cook the pasta, after which you need to put them on a bowl and pour over the prepared sauce.

To add extra spice to the dish, you can supplement it with cherry tomatoes, cut into halves and slices of hot peppers. Zucchini and zucchini are quite good in shading the taste of pasta - they are usually fried in refined oil until golden brown and served with the main course. Keep in mind that pasta with shrimp, mussels or squid is a dish on its own, it should not be made instead of a side dish for something else.

In conclusion, we will give a number of tips that will make cooking easier, and the taste - rich and original. If you plan to use a frozen sea cocktail for pasta, then it is not at all necessary to defrost it before cooking - it will melt during food processing.

Pay special attention to the time of cooking squids - if they are overexposed on fire, the product will simply become rubbery, you will not be able not only to enjoy its taste, but even just to crack it will not be an easy task.

There are quite a few recipes for making pasta with squid, which is why everyone can choose the one that seems to him the most delicious and nutritious. And let the Italian dish become the most beloved in your family and decorate the most important and warm meetings with family and friends.

Pasta with squid is very popular among residents of the seaside regions of sunny Italy. It is impossible to say with certainty which of them is the progenitor of this original and very tasty dish. For example, in Sicily or Sardinia, it has long been considered traditional and has many different cooking options.

Simplified version

Pasta with squid is a product consisting of two parts: pasta and sauce. Both of them are cooked at the same time in different dishes, and then mixed and served hot to the table. For cooking, they take any pasta, but most often it is spaghetti. The sauce is usually prepared with tomatoes, garlic, spices, herbs and white wine. But there are no strict requirements in this regard. Therefore, for those who will cook this dish for the first time, we can advise the most simplified version. You will need the following products: for 200 grams of durum wheat spaghetti - 2 tomatoes, salt, 4 medium-sized squid carcasses, onion, ground pepper, 4 cloves of garlic and vegetable oil.

Preparing such pasta with squid is very simple:

  1. First you need to prepare the ingredients for the sauce. Tomatoes must be held for 40 seconds in boiling water, and then poured over with cold water. This way you can easily remove the skin from them. Then, cutting the products in half, remove all the seeds, and cut the remaining pulp into cubes.
  2. The bulb should be crumbled with feathers. To do this, the head must first be cut into two parts, and then each of them - into thin slices.
  3. Peeled garlic cloves can simply be cut in half.
  4. After that, you can put water for spaghetti.
  5. Next, sauté the garlic in oil in a pan. As soon as the pieces are browned, they will immediately need to be thrown away.
  6. Saute the onion in the same oil.
  7. Add tomatoes to it and hold them over medium heat for no more than two minutes.
  8. Add squid and mix well. Stew products under the lid for 3 minutes.
  9. Strain the cooked spaghetti and quickly mix them with the fresh sauce.

The preparation technology includes the following steps:

  1. Saute peeled and chopped onion in butter.
  2. Add thinly sliced mushrooms and fry them until tender.
  3. Introduce the broth, pour the cream and bring the resulting mass to a boil.
  4. Add the squid cut into rings and warm them in the sauce for 3 minutes.
  5. Boil pasta separately. For such a dish, it is better to use horns or feathers.
  6. Mix the pasta with the sauce and heat them together for 5 minutes.

In a plate, the finished dish can be sprinkled with grated cheese. So its aroma will be more gentle and pleasant.

Spaghetti with squid in sour cream sauce is a tasty and satisfying second course. Even a novice hostess can cook it. Everything is done quickly and simply, and the affordable set of products will not hit your wallet.

About the ingredients. In order for the finished dish to delight your family with its taste, always buy pasta only from durum wheat. I prefer one brand of spaghetti. They keep their shape perfectly, do not boil soft and taste very good.

We take fresh-frozen squids - how to clean and cook them so that they remain tender, I will tell below. And I also advise you to buy carcasses - they have less ice and come out much cheaper. Take sour cream of any fat content. I strongly recommend dried garlic - it does not taste bitter, but only gives the dish a very delicate and pleasant aroma. Fresh green onions are optional, but they pair well with our products.

Ingredients:

(300 grams) (600 grams) (150 grams) (1 pinch) (1 pinch) (2 tablespoons ) (1 pinch) (1 branch)

Cooking step by step with photos:

Since it will take us 10-15 minutes to prepare the squids, we immediately put a pot of water on the fire to cook spaghetti. We defrost squids and clean them under a stream of warm running water. We remove the purple skin, remove the insides and the spine (this is such a transparent thin plate). Rinse under cold water.

Now we cut the peeled squids. You can use cubes, but today I wanted long and rather thin strips. During the heat treatment process, some curl up into beautiful spirals.

Salt the boiling water and put the spaghetti in it. After boiling, you need to cook for a short time - literally 3-4 minutes. We do not need complete readiness - it is enough for the spaghetti to become elastic. While they are cooking, heat a couple of tablespoons of vegetable oil in a frying pan and put the squids in it. Fry over high heat for about a minute with constant stirring. The secret of the softness of these seafood is simple: the less heat treatment, the softer they are. Squids will release a lot of liquid - this is to our advantage.

Add sour cream and dried garlic. We mix everything. It is not necessary to bring the sauce to a boil, otherwise the sour cream will simply curl up and become grains.

Squids go well with pasta, so preparing a tasty and nutritious dish is not at all difficult. Of course, if you just combine these two ingredients, nothing special will work, but if you cook squid in a creamy onion sauce and “cover” all this with hard cheese, you get real yummy!

Ingredients:

  • Greens - 1 bunch.
  • Squid - 500 g
  • Onion - 1 pc.
  • Butter - 20 g
  • Pasta - 200 g
  • Cream - 30 g
  • Hard cheese - 100 g

Cooking:

  1. First of all, boil the pasta. Spirals, straws, bows, noodles or spaghetti are all great. The only point, pasta must be from durum wheat. Grease the pasta with butter (so that it does not stick together).
  2. Now you can start cooking squid. Peel the squid carcasses from the skin and boil in salted water - 2 minutes in boiling water. Cool the squids and cut them into rings (not very thick).
  3. Cut the onion into thin half rings and fry in a small amount of oil until golden.
  4. Add squid rings and cream to the onion. Salt and add black pepper (optional). Mix well and simmer for 3-4 minutes over very low heat.
  5. Coarsely chop the greens (dill and parsley) and add to the pan. One more minute and you're done!
  6. Put the pasta on a plate, pour the resulting sauce from the squids, put the rings of the squids themselves and “cover” everything on top with grated hard cheese (not very large).
